Skinning

Skinning is the technique involved in removing the skin and gutting the fish to make it ready for cooking.

Freezing

A technique involving turning a product into a solid state by forced cooling techniques.
Freezing is used in our workshops for species marketed internationally.

As a block or as IQF (Individual Quality Frozen), we tailor the technique to the product and the request of our customers

Grading

Grading is a sorting process designed to check or harmonise the size of a product.

It can be manual, using a gauge, or mechanical.

Each species, according to its size, is sorted and sized to meet the specifications of our customers.

Packaging

A so-called “Fresh Packed” packaging workshop is reserved for the packaging of products.

Depending on the market and the specifications, the product is packaged either in boxes, trays or skinpacks.

Each container is then labelled, in accordance with regulatory standards and customised according to our customers’ requests.
